Distilling has been part of Yalumba history since the beginning. So when Starward asked to mature whisky in our octave barrels, we were excited to help craft a modern single malt whiskey, shaped by The Octavius Shiraz & aptly named Starward Octave Barrels.
As we celebrate the fifth release of The Caley Cabernet Sauvignon and Shiraz, we take a moment to reflect on the journey so far with Yalumba Proprietor Robert Hill-Smith and Winemaker Kevin ‘KG’ Glastonbury.
With cooler temperatures and more rainfall than Barossa Valley, Eden Valley is well known for making high quality Riesling and Shiraz wines.
Very deep and dense red in colour. Inviting and expressive florals of cassis, rose petals, iodine, violets and cedary tones. This truly epitomises the distinct character of Coonawarra and the unique essence of The Caley. Shiraz fruit merges with Cabernet Sauvignon delivering a long and seamless palate. Full in depth with a prominent chalky, mineral, tannin profile.
Very deep, dense red. Showcasing expressive, fragrant aromatics of blackcurrant and dark cherry with cool iodine notes merging into savoury, leafy hints, all typical Coonawarra Cabernet Sauvignon. A defined, composed and very inviting wine with succulent Shiraz throughout. Medium to full depth with a densely layered structure delivering a prominent yet silky tannin profile.
Very deep, dense red. Showcasing bright, attractive floral notes, cherry, oyster shell, leafy stalks and redcurrant, all typical of Coonawarra Cabernet Sauvignon. A very defined and composed wine with engaging ripe fruits on the palate. Medium to full depth with a densely layered structure delivering a prominent yet silky tannin profile.
Deep, dense red in colour. Distinct Coonawarra Cabernet Sauvignon aromas: fresh, cool and refined green olive, leafiness, iodine and intriguing, fine and complex aromatics. Richness and precision, revealing refinement of Shiraz with red currant and spice. Perfectly balanced acid and tannin line sweeping through to the long finish.
