This rich and vibrant cabernet sauvignon again confirms that the Y Series wines provide excellent varietal flavour and fruit generosity. The grapes were fermented in static potter and rotary fermenters. Warm temperatures at the onset of fermentation and also 3-5 days post ferment maceration has helped extract soft fleshy tannins and build wine structure. The grapes for the Y Series Cabernet Sauvignon have been sourced from terrific cabernet vineyard regions within dryland South Australia; the Barossa Valley, Eden Valley and Langhorne Creek. The Barossa Valley portions contribute lovely rich chocolate and dark plums, the Eden Valley elegant berry fruits/blackcurrant and tobacco leaf and the Langhorne Creek have classic blackcurrant and mint.

This wine displays characters of bright blackcurrant, cedar, dark cherries with a hint of mocha chocolate. An elegant palate structure and fine savoury tannins mean the wine is terrific drinking now but will also develop classic aged characters over the next 5 years.
